Prepare as many small green pimentos stuffed with rice and braised, and halves of grilled tomatoes as there are Tournedos; allow also 3 slices of fried banana per Tournedos.

Season the Tournedos and shallow fry in butter, place each on a half tomato and arrange in a circle on a round dish. Surround with the stuffed pimentos and place the sliced bananas in the centre of the dish.

Serve separately, Sauce Chateaubriand containing some of the reduced cooking liquid from the pimentos.
