Method

Correctly speaking, Sweet-Meat is a Hachis consisting of a mixture of various meats but it may be prepared using only one kind, such as roast fillet or sirloin of beef.

To 1 kg ( lb) of finely diced meat, add 125 g ( oz) mixed currants and sultanas, 2 eggs, 2 tbs redcurrant jelly, a little salt and pepper and a very small pinch of ground ginger. Mix together well.

Roll out an oblong layer of puff paste trimmings and place the prepared mixture on top; cover with a layer of the same paste, pinch the edges to seal, decorate and trim to a neat shape. Brush with beaten egg and decorate with the prongs of a fork; allow to rest for one hour then bake in a moderate oven for approximately 35 minutes.

Serve accompanied with a sauce made from 14 dl (5 fl oz or U.S. cup) good veal gravy containing 3 tbs melted redcurrant jelly.
