Prepare the kidney and shallow fry in the same way as for Montpensier.

Arrange the slices in a circle on a round dish with a stuffed half tomato on each. Garnish the centre of the dish with a well reduced Tomato Fondue and surround the kidney with the sauce prepared as for Montpensier.
