Prepare the kidney in the manner as described for Rognon de Boeuf au Madère replacing the Madeira with Chablis, Corton, Lafitte, Port, Saint-Julien, Sherry, Volnay etc. The title of the dish should include the name of the wine, e.g. Rognon de Veau au Chablis.
