Method

Poêlé the fattened pullet then deglaze the pan with mushroom essence and add 2 dl (7 fl oz or U.S. cup) Sauce Demi-glace.

Arrange the chicken on a dish and surround with 20 nice cooked grooved mushrooms.

Serve the lightly buttered sauce separately.
