4018 Cèpes à la Crème

Method

Slice the flap mushrooms and cook in butter with 1 tbs chopped onion cooked in butter without colour per 250 g (9 oz) of flap mushrooms.

When they are cooked, drain them and cover with boiling cream. Allow to cook slowly until the complete reduction of the cream.

At the last moment, add a little thin cream and serve in a deep dish.
