Method

Sweet potatoes are usually cooked by baking them in their skins in the oven and serving them with butter.

They can be cooked in any of the ways as for ordinary potatoes particularly Sautées, Gratinées and Duchesse etc.

They are also very good when cut into pieces and deep fried but in this case they must be served as soon as they are ready as they tend to become soft very quickly.

They can also be made into a soufflé in the same way as Soufflé de Pommes de Terre.
