Method

Prepare a potato croquette mixture adding 100 g oz) grated Cheshire cheese per 1 kg ( lb) of potato mixture.

Mould into small round flat cakes, place on a buttered tray and brush with beaten egg. Place a thin slice of Cheshire cheese on each and place in the oven for approximately 7–8 minutes before serving.
