Method

There are two varieties of salsify used in cookery— the white and the black; the black variety is also called Vipers’ Grass (Fr. Scorsonère).

The same recipes are applicable to both kinds. In whatever way they are afterwards to be finished the salsify should first be carefully scraped then washed before being cooked in a Blanc.
