These are usually purchased ready prepared. If, however, it is necessary to prepare them on the premises the ingredients and method are as follows:


Mix together in the usual way for pastes, knead twice then allow to rest for 1–2 hours before rolling and cutting.

All the recipes given for macaroni can be used for noodles.

For Nouilles a l’Alsacienne it is usual to sprinkle the noodles when arranged in the dish, with some raw noodles sauteed in butter until very crisp.
