Mixture A


  • 500 g (1 lb 2 oz) sifted flour
  • 200 g (7 oz) caster sugar
  • a pinch of fine salt
  • 12 eggs
  • 1½ litre (2⅝ pt or 6½ U.S. cups) milk.


Place the flour, sugar and salt in a basin, add the eggs and the milk little by little, whisking it well to form a smooth batter. Flavour with 1 tbs vanilla sugar or orange or lemon sugar which should be included in the weight of sugar given above. The mixture may be flavoured with 3 tbs of Kirsch, brandy or rum.
