Method

This surprise omelette is made in the usual way but with excellent quality raspberry ice in which are set some nice peaches which have been poached in vanilla-flavoured syrup.

Cover with Italian meringue flavoured with Maraschino but leave the tops of the peaches showing through.

Decorate with some of the same meringue using a piping bag and tube; dredge with icing sugar and glaze quickly in the oven.
