Method

These soufflés may be made with either of the two soufflé mixtures—the cream type or the fruit purée type as indicated at the beginning of this section.

Soufflés made with the cream-type mixture are flavoured with liqueurs such as Rum, Curaçao, Anisette, Crème de Vanille, Crème de Cacao, Chartreuse etc.

Those made from a base of fruit are flavoured with Kirsch, Noyau etc.
