Cover the bottom of a timbale with Prepared Rice for sweet dishes flavoured with Kirsch and Maraschino.

Arrange halves of skinned peaches poached in vanilla-flavoured syrup on the rice and cover them with a thin layer of the same rice. On this spread a layer of Apricot Sauce and sprinkle with crushed macaroons.

Place in a warm to moderate oven for 10–12 minutes but do not allow the surface to gratinate.
