Preparation of Mincemeat

Ingredients

  • 500 g (1 lb 2 oz) chopped beef kidney suet
  • 600 g (1 lb 5 oz) diced cold cooked fillet of beef
  • 500 g (1 lb 2 oz) seedless raisins
  • 500 g (1 lb 2 oz) each of currants and sultanas
  • 500 g (1 lb 2 oz) mixed peel
  • 250 g (9 oz) peeled and chopped apple, the grated rind and juice of 1 orange
  • 25 g (1 oz) mixed spice
  • 1 dl ( oz or ½ U.S. cup) each of Brandy, Madeira and Rum.

Method

Mix all the ingredients together, place in a stone jar, cover tightly and allow to macerate for one month.
