4611 Gelées à la Russe

These are ordinary jellies whisked on ice until they begin to set. They are then moulded as quickly as possible.

By using two or three different colours and flavours of jelly and skilfully mixing them just before moulding, it is possible to obtain very effective marbled jellies.
