Place 5 dl (18 fl oz or U.S. cups) pounded banana flesh in an equal quantity of Kirsch-flavoured syrup and allow to macerate for 2 hours. Add the juice of 3 lemons then pass through a sieve.

The mixture should be at 20°–21°.
