Place a very green water melon in the refrigerator for 3 hours. One hour before it is required for serving, cut out a round section from the top and remove the seeds and filaments as indicated for Melon en Surprise.
Scoop off the flesh, using a silver dessertspoon but do not remove it from the inside of the melon. Sprinkle it with Maraschino and replace in the refrigerator.
Arrange the melon on a dish of crushed ice or on a sculpted block of ice, then present and serve it in Sorbet glasses in front of the guests.
