The mixed compotes are a kind of fruit salad made of several different kinds of cooked fruits, arranged in a dish on a bed of a purée of fruit cooked with sugar, or on a purée of any fresh fruit. cooked fruit jellies such as redcurrant jelly, quince jelly, apple jelly play a part in these dishes being used either to coat the cooked fruit or to surround it in the form of fancy shapes, or chopped.

A variety of crystallized or preserved fruits are nearly always added to these mixed compotes.
