Pour 1 bottle of red wine over 200 g (7 oz) loaf sugar in a copper pan and allow the sugar to dissolve. Add the zest of 1 lemon, a small piece of cinnamon and mace and 1 clove. Heat until the surface is covered with a fine froth then pass through a fine strainer.

Serve with a thin slice of lemon in each glass.
