  • 1-1.25 kg (2-2½ lb) pike
  • 1-2 tablespoonssunflower oil

Method

Clean the pike, rub it inside with the pepper and place whole in a deep ovenproof pan on top of a heatproof ceramic tile or plate. Baste with oil and put uncovered in the oven (200°C, 400°F, gas mark 6) for 7-10 minutes until the fish turns brown. Transfer it to a smaller vessel and add the sour cream, half covering the fish with it. Cover the pan and place in a low oven (150°C, 300°F, gas mark
