Soak the cleaned and plucked partridges for 3-4 hours in marinade (see below); dry thoroughly and rub the inside with a mixture of salt and juniper berries. In a saucepan, heat a little oil and the butter to bubbling; put in the birds, breast side down. Cook uncovered for 25-30 minutes, basting occasionally with the marinade and later with the warmed cream.
