  • 1 tablespoondried mint
  • 1 tablespoonjuniper berries
  • 5-6

Method

Place the herbs and spices in a small linen bag. Chop the onion finely and bring to the boil in ½ litre (16 fl oz) of water. Add the garlic, finely chopped, lemon juice and salt, cover and let stand for a few minutes, then put in a cool place.
