Method

Make a pancake batter with the flour, egg yolks and cream. Peel the apples, cut into thin strips and fry in butter together with the sugar and lemon peel, then stew gently until soft. Fry four identical pancakes. Fill the pancakes with the apple, roll up and place the rolls in a gratin dish.
