Clean the pig’s stomach thoroughly and set aside. Boil all the offal together for l-1½ hours then cut into 1 cm (½ in) cubes. Cut up the fat in the same way and chop up the onion and garlic. Grind up the spices, herbs and salt and mix all together into a uniform mass. Stuff this tightly into the cleaned pig’s stomach, place the stomach in a greased baking pan and cook in a very hot oven (230°C
