  • 1 large goose

Method

Clean and dry the goose, then rub the inside with a mixture of salt, garlic and juniper berries. Stuff tightly with the apples cut into quarters. Sew up, place in the baking pan and cook in the oven (190°C, 375°F, gas mark 5) for 2-3 hours, basting from time to time.
