Method

Peel and grate the potatoes. Rinse the fruit in hot water, retaining any juices. Chop the onions and fry them lightly. Combine all the ingredients except the butter and milk in a heavy-bottomed casserole and place in a pre-heated oven (180°C, 350°F, gas mark 4). Take out after 15-20 minutes and give the contents a good stir. Put back in the oven. Repeat this procedure two or three times, taking
