Fry the onion lightly in the fat over a low heat and add the flour. Cook and mash the potatoes. Bring the milk to the boil and keep just at boiling point. Beat the egg and add with the onion mixture to the mashed potato. Mix up well and add the hot milk a little at a time, stirring all the while. Add salt. Bake in the oven (200°C, 400°F, gas mark 6) for 10 minutes in a well-greased pan.
