Skrob is a type of omelette with a filling, usually cheese (Moldavian brynza in the authentic dish), potatoes, tomatoes or aubergine.
Beat the eggs and mix with the milk. Pour the mixture into a hot frying pan oiled with a little of the sunflower oil; lower the heat slightly and stir continuously as the eggs set. Add the grated cheese, a little at a time, and gradually lower the heat; add the herbs and cayenne pepper. Have ready the vegetables, cut into small pieces, dipped in flour and fried in the remaining oil, separately;
