Method

Bring 2 litres (3½ pt) water to the boil, put in the chicken, 3 whole onions, the carrot cut in half lengthwise and the whole celery heart. Bring back to the boil and simmer until the chicken is cooked (45-60 minutes). Cut it into 1 cm (½ in) pieces; remove the vegetables and strain the stock. Spri
