Poached trout can be garnished with this sauce of nuts, fruit and spices.

Ingredients

  • 200 g (7 oz) crushed walnuts
  • 1 teaspoon sugar

Method

Boil together the walnuts, sugar, salt and peppercorns in 250 ml (8 fl oz) water for 10 minutes, then add the mint and vinegar. Mix well over heat and serve.
