Tolma is the general name given in Armenian cuisine to various dishes in which vegetables or fruits are stuffed with ground lamb and spices. These are always served with sour or sweet-and-sour sauces. The stuffing remains constant; variations occur only in the vegetable or fruit that is stuffed: cabbage, tomatoes, peppers, aubergine, onions, apples or quinces.
