Cut the lamb into pieces. Chop all the vegetables and the apricots into small pieces of equal size, and arrange in layers in an earthenware casserole, adding salt, pepper and herbs to each layer. Put the pieces of lamb on top and cover with boiling water. Cover lightly and cook in the oven (170°C, 325°F, gas mark 3) for 2 hours.
