Method

Boil the beans briefly, cut the aubergine and pumpkin into small cubes, mix together with the herbs and arrange in a deep baking pan. Pour the butter, melted, over the top. Beat the eggs, pour them over everything, and bake in a pre-heated oven (190°C, 375°F, gas mark 5) until the eggs are set.
