This dish is very popular in Central Asia; several versions are known. It consists of two basic parts prepared separately and combined before serving: the noodles, and the sauce, called vadzha.

Method

Prepare the noodles: make a thick dough of the flour, egg, salt and 200 ml (7 fl oz) water, form it into a ball, cover with a napkin and leave for 15-20 minutes, then roll out thinly, roll tightly into a c
