Wash the peas and put to soak in lukewarm water; leave for 5 hours, adding more warm water every hour or so as it becomes absorbed. After about 3 hours, add ½ teaspoon salt and stir well. Drain, and sprinkle the peas with baking powder. Mix well, wrap in a linen cloth and leave for 1 hour. Rinse thoroughly in both cold and warm water, making sure all the baking powder gets washed away.
