Strawberry sherbet

Clean and wash the strawberries in cold water; crush in a bowl to squeeze out the juice. Press through a sieve and leave to stand covered with sugar. Add warm water and bring to the boil, lower the heat and simmer for 1-2 minutes. Cool.
