• 1.75 kg (3½ lb) beef or pork not too lean
• 1 onion

Wash the meat; place in a cast-iron casserole together with the vegetables, add 1½ litres (2½ pt) boiling water and salt, cover tightly and place in a hot pre-heated oven (220°C, 425°F, gas mark 7).
