Line a baking pan with a mixture of butter and dried breadcrumbs. Mix the egg yolks with the sugar until the mixture turns white; add the potato flour, baking soda, lemon peel, nuts, fruit juice and beaten egg whites. Beat well. Pour the dough into the lined baking pan and bake slowly for 45 minutes (150°C, 300°F, gas mark 2). Sprinkle with icing sugar and vanilla before serving.
