Method

Grate the carrots finely into a glass or china bowl. Sprinkle the sugar over the top and leave until the sugar appears to be absorbed. Mix the egg yolks, butter, ground spices and lemon peel until the mixture turns white; combine with the carrot mixture. Add the flour and beaten egg white, then make into a dough, adding the baking powder, and mix well. Spoon the dough into a baking pan and bake
