Method

Fillet the herrings and soak in a mixture of milk and water for 10-12 hours. Chop the herrings and shred the potatoes. Fry the finely chopped onions in the butter or fat bacon. Grease a saucepan of thin metal and alternate in it layers of potatoes and herring, brushing each layer with beaten egg and sprinkling with chopped onion, dill and bits of fried bacon, if used.
