Ingredients: 100 g minced pork; 1 tsp Shaoxing wine; 2 tbsp finely sliced spring onion greens; 2 tbsp cooking oil; 2 tsp light soy sauce; 1 tbsp cooking oil; 150 ml warm stock or water (at 40–50°C); ¼ tsp salt; 1 tbsp Shaoxing wine; 2 dried shiitake mushrooms; 3 eggs (200 ml when beaten)
