Ingredients: ¾ tsp potato flour mixed with 1 tbsp cold water; 1 tbsp finely chopped garlic; 2 tsp Chinkiang vinegar; 1½ tbsp Sichuanese chilli bean paste, or Sichuan pickled chilli paste, or a mixture of the two; 1 tbsp finely chopped ginger; 150 ml stock; 2 tsp caster sugar; Salt; 600 g aubergines; 4 tbsp finely sliced spring onion greens; Cooking oil, for deep-frying (400 ml will do if you are using a round-bottomed wok)
