Cream of Asparagus

This delicate soup is a wonderful addition to a spring gathering alongside an egg dish and a vinegary salad (perhaps the Mostly Vegetables Potato Salad recipe). The ingredient list is simple, as I selected elements that would enhance but not overpower the subtle asparagus flavor. I recommend using green asparagus, as the purple asparagus can turn a slightly unappealing gray color when blended.
