Although I love a good hot dog, I can’t think of a more indulgent summer treat than a lobster roll. The food snob in me just can’t see a summer go by without one. For the best results, boil the lobster yourself, and for no more than 9 to 10 minutes so the flesh is delicate and flavorful.
Boil the lobsters in a large covered stockpot with the crab boil seasoning, salt, and lemons, as instructed on the box of crab boil seasoning.
When the lobsters are cool enough to handle, carefully remove the flesh, leaving the claw meat whole. Cut the remaining flesh into large dice.
