My grandmother grew up very poor during the Great Depression. This is a soup she and her family survived on many a cold winter by drying out the heels of their leftover bread on their wood-burning stoves. Don’t let the provenance scare you off, though, because this soup is incredibly delicious, and even though our economic health is slightly more robust, I still applaud a chef who has little to no waste. I recommend using homemade stock and bread for the best results.
