Made in vast quantities, my mom’s stick-to-your-ribs chicken and dumplings fed our large family well. Too bad what that carb-load was actually doing was fueling the internal combustion phase of celiac inflammation for me. Light as air, these gluten-free dumplings are just as satisfying—and do double-duty as matzo balls. You will notice that I’ve added a smidge of millet flour here for enhanced flavor and texture.
