The secret ingredients here are the enriched milk-and-egg combo that gives the cake a custard-like quality and the raisins, which don’t go into the cake, but flavor the rum. Save the rum-laced raisins for Cuckoo Carrot Cake or to swirl into vanilla ice cream. (Another nice use is to mix them up with a bowl of yogurt, granola, and fruit for an adults-only breakfast.)
