Rye, of course, is not gluten-free, but teff flour is, and it gives this bread a convincing rye flavor. The dark color completes the illusion. And for a perfect sourdough, replace the teff flour called for in this recipe with additional Bread & Pizza Blend, eliminate the caraway seeds, increase the amount of yeast to 1 tablespoon, and replace the brown rice syrup with honey.
