6as part of a multi-course meal

When I was pregnant with our twins I was looking for interesting ways to eat get more folic acid and was tired of eating spinach salads. I was also craving flavor and needed extra protein to keep my energy up. After all, I was eating for three! I came up with this tasty and spicy recipe loaded with spinach, tofu, and crunchy peanuts. Every time I ate this I remember lots of kicking in my tummy, so I would say it garnered six thumbs up all around.
